In this episode, we set off to explore Arboras (postcode 34150), a village nestled on the hillside underneath the Larzac Causse. Situated in the heart of a rich and varied landscape, the vines flourish between fertile plains and the sculpted river gorges bordered by discrete riparian forests.
Vincent Goumard, winegrower at Mas Cal Demoura, describes the important process of pruning: "It is the beginning of a dialogue, the moment when you start to get to know and understand the vines, with a view to producing the wine". Undertaken during the winter months, which can often be cold even in a Mediterranean climate, it is a moment ripe for reflection, even meditative: "When you in are in the process of pruning, you have the feeling of advancing, of moving forward, whilst at the same time being truly alone, and conscious of the solitude."
